This is my basic, go-to recipe for simple salsa. It pairs perfectly with Chicken Fajitas or plain chips with sour cream or guacamole. One of our office mates used it to improve the vegan macaroni and cheese dish she was having for lunch. It was a hit!
Simple, Smooth Mexican Salsa Recipe:
(This is not a chunky salsa)
Ingredients:
1 14 oz can fire roasted diced tomatoes
1 14 oz can diced tomatoes
4 cloves garlic, sliced
½ large sweet onion (approx. 1 cup), chopped
1 teaspoon salt (or to taste)
Bunch of cilantro (to taste) – I rip the tops off of a bunch and use that
Directions:
Place all ingredients into a food processor. Blend until onions, garlic and cilantro are in fine pieces. Taste – add salt / cilantro to taste.
Serve with chips or anything that needs bold flavor!
Makes 3+ cups. You can cut this in half, but I always enjoy the leftovers.
